Nearly 60 years after our founding, the availability of good ingredients in Alaska has grown along with our palates. Long gone are the days of tin cans of green beans and corned beef. Today, the plates coming from the kitchen represent not only quality ingredients, but also our pride in creating an essential aspect of your time with us. Wholesome, delicious and attractive—this is the kind of food that we strive to offer throughout your stay.
Your hosts and a few naturalist guides join you for breakfast and dinner in Potlatch III, Camp Denali’s dining room. Following the 7:30 a.m. bell that calls you in, we begin our morning meal with a breakfast bar of whole-grain hot cereal, homemade granola, cold cereals, homemade yogurt, raisins, and nuts. The hot breakfast entrée, plated and served from the kitchen, may include an herb and goat cheese egg soufflé with vegetable-potato hash, Dutch-oven pancakes with lingonberry sauce and alder-smoked bacon, or Spanish egg and potato frittata with cheddar-herb scones.
Following breakfast, we set out a full spread of sandwich makings, vegetables, fruits, trail mixes, and fresh cookies for a make-your-own sack lunch. Whether on a guided hike or paddling across Wonder Lake at lunchtime, there is no need to return to Camp, as you will have the noon meal along wherever the day should take you.
Camaraderie and recounting of the day’s events enhance the fine cuisine at the day’s final meal. Served at 6:30 p.m., we start with fresh salad or soup and bakery bread, followed by the dinner chef’s inspired take on a main entrée of meat or fish. A vegetarian dish is also always an option. To complete the meal, we offer another taste of our baker’s handiwork—a dessert from the tundra in a berry torte, or a rich flourless chocolate cake, perhaps.
Camp Denali is far from lines of supply. We do our best to meet diet requirements that are directly related to a serious health issue or food allergy. When notified in advance, we are able to accommodate gluten-free, dairy-free, vegetarian, and vegan diets as well as most food allergies.
In our experience, guests who have other dietary needs or preferences are able to self-regulate by choosing among the options we provide. If your diet or allergy requires our kitchen staff to provide special food, please be mindful of our effort and adhere to your dietary requirements during your stay.
Camp Denali does not have a liquor license; however, you are welcome to bring your own.
The latest collection of culinary favorites from the kitchens of Camp Denali and North Face Lodge, A Cache of Recipes, combines new creations prepared with today's flair, along with a few of our timeless classics.
We're celebrating our 60th anniversary at Camp Denali in 2012! Over the years, there have been some changes, but the vision of Camp Denali's founders still guides us. All summer long, we'll be celebrating the pioneer spirit and 60 years of sharing our unique perspective of Denali with visitors from around the world.
